I am new to REAL RC cars and I have a few questions.I'm probably going to by a Associated RC10GT Plus RTR.
Will that be a good car for a starter in nitro rc?

What kind of maintenance am I looking at?
How often will I have to replace the glow plug and much do they normally cost?
How long will it take to break in the engine and what do I need to do when it is broken in?

Is their any thermomater I need to use so I don't let the engine overheat?

Under normal useage how long will a gallon a fuel normally last?

What are the must have tools?

Can the cylinder head be changed in size depending on if it is summer or winter so the engine will run at normal temp.?

Sorry about so many questions,I don't want to just jump into this without having some idea of what I need to do.

The GT Plus should be a great first nitro truck. Associated vhicles are excellent: Follow the instructions and you won't have any problems. I believe the manual covers break-in and tuning.

Maintenance won't be too bad. The worst part is cleaning the dirt that sticks to the nitro residue, but the truck is pretty stout. Keeping all the nuts and bolts tightened will be the biggest chore.

There are two types of temp gauges: Ones that go on the car and temp guns like a laser thermometer. Both work, but the on-car ones can't be moved to another vehicle easily, which isn't a problem for you. They are also 1/2 the price of temp guns.

A gallon of fuel will last about 50 tanks by my calculations, and 6-10 of them will be taken up by break-in.

The truck comes with L-shaped allen wrenches and molded nit drivers, so you'll only need an X-Acto and a pair of pliers. Some screwdriver-style allen drivers are nice, and similar nut drivers also help.

RCCA did an article on cold-weather running recently. You can either run a smaller head, cut down an existing head, or use some aluminum tape over the fins to prevent cooling, depending on what's available for your engine.
