That's the only way I know to do it! Is there some other way? You do it with the engine running so you can hear how the engine is taking the fuel.
The engine should bog down for a second or two befor it revs up when you drop the hammer (pull the trigger)!

You can always adjust the screws while it's running, only problem is, if you make too many adjustments at once, and the engine dies, will you be able to put everything back if you can't restart it? This usually happens to me if I mess with the idle mixture to get better off-idle throttle response. I'll adjust it so there's no lag when I punch the throttle & all of a sudden now I can hardly start or idle my boat.
IMHO I adjust the idle separate, when it will idle & start well, I'll stop messing with the idle. Then what I do is mess with the main mixture (high speed) screw until I get it near perfect. I do all of this while it's running myself. Also, don't forget that the boat will be quite different out of the water compared to when you're running it. Off the water it will seem to run on the rich side - maybe a little slow on throttle response. But toss it in the water & it'll fly with hardly any lag in throttle response.

Depending on the weather, the humidity, etc., yes - you may have to adjust it every time. It usually isn't more than a couple clicks either way, but you usually do have to tweak it.

yes, it's much easier to adjust it while it is running and briefly blip the throttle wide open while adjusting the needle to get a feel for the current setting. at low rpm, you can run without water cooling for a few minutes safely. with experience, you'll be able to adjust it very close to optimal setting on shore just by the engine's throttle response and it's sound. you'll have to make regular small adjustments to compensate for weather change, maybe even the same day. a good needle on a cool morning will go richer with the warm afternoon air because the warm air is less dense. and vice-versa. make sure you lubricate the shaft regularly as this can mess with the engines performance and make setup more difficult. ;)

if you have a third channel, these will do it on the water. they work great.
