The Victor Model Products Soling One kit might be your best bet. Besides being capable of sailing in above-average winds, the stock parts won't require much upgrading unless you feel like altering the yacht's basic setup. Checkout the AMYA website or the Victor Model Products 'site. This sailboat is a molded plastic hull but is very tough overall; plus, there's a ton of setup advice available on the 'web.

Very much so. Due to it's short keel design the Soling will sail in shallow/weedy water quite well and it's overall size will fit most vehicles. The sail/mast set is easily detachable for transporting to-and-from the lake as well, and you can paint the hull with regular Krylon spray paints. I would recommend ordering the pre-built keel unit as this will shorten-up the kit's building process a bunch!
