What's better, finger over the pipe or pinching fuel line?

finger over pipe richens the engine
anything else either leans out the engine or hurts (flywheel)
i always shut my rcs off by the pipe method

The richening/leaning doesn't make any difference. It's not anywhere near enough or for long enough to even have an effect on the engine. Infact, some engine manufacturers tell you to pinch the fuel line to shut it down.
You can pinch the fuel line, cover the stinger on the pipe or even put your finger over the carb if you can pull the air filter off. That's how I used to shut down my truck but now my new airfilter is on tight enough where it's a pain to pull it off.
The stinger's usually easiest, but sometimes it can get real hot

I just got a 4.6 Savage that I am still building and have had an RC-10GT for 3 years now. What I don't get is that with the GT it says to pinch the fuel line or if you really have to, cover the pipe. With the Savage it is just the opposite and goes as far as saying that pinching the line will even hurt the engine. What I usually do is run the engine until it runs out of fuel so there isn't any in the fuel lines to collect moisture. In the GT I will also sometimes bump the flywheel with my shoe but you can't do that due to the engine's location in the Savage. I guess I would go with the pipe pluggin method since that is what HPI recommends but I really don't care for it that much because like RC Revolution said, it richens the engine a lot.

Running rich is not harmful to the engine, especially not for 2 seconds.

Plugging the exhaust pushes fuel into the engine, and floods it. So next time you start it up it will take a while to do so. The best way is to pinch the fuel line, and you can check if your low speed needle is tuned right at the same time. :D

Running rich is never really harmful to your engine...more oil
Sportmax - Are you sure it makes it harder? That's the way I always stop my truck so I don't have to reach into the body and pinch the line. My truck starts within 2 seconds of drill start with a good glow starter. Even when I had a pull starter it on it was always 2-3 pulls.
Neither method changes the mixture enough to make a huge affect on mixture. Whichever is easier for you to do. If your pipe gets too hot, pinch the line. If the line is buried in the body, cover the stinger

yes, dont let anyone tell you otherwise, unless you are running extremely rich, which can sometimes cause hydrolocking then snapping conrods, more fuel more oil, more oil less wear

Yeah, that's what I'm saying, all it hurts is performance.
