what does the timing on a motor do?

If you increase timing it increases the rpm levels which equates to acceleration. Most motor builders well sell motors set at an timing area where motor produces the best level of both rpm and torque which varies.
Also remember since you are changing the motor's relative power, you may also need to adjust the gearing -depending on amount of degrees the timing is advance or retarded. Gear down a tooth when increasing 2-5 degrees gear up when retarding.
