I have been flying my GP flat-out with a no frills 4ch radio, I now have a 6ch system with all the adjustments. What I need to know is if someone could give me a ballpark figure for my exp, D/R and such. I am new to these adjustments.

DR and Expo are not specific numbers. They will be different for everyone, according to taste.

In fact I have stopped using DR and only use different expo rates. High might be 30% expos and low might be 60% expo.

It would help if you stated what transmitter you have. Saying it is 6 channels tells us nothing.

Sorry for the lack of info, it is a Tower Hobbies system 3000 6xm.

I'm still not sure about the DX7 FLAP menu or if I should use elevator to flap mixing.

I've heard that with up elevator, you want down flap to tighten turns.

Why does the DX7 have three settings for FLAP?

It depends on what you are doing as to if you want elevator-flaperon mix or not... and which direction you want the ailerons to go.

Moving the ailerons up with up elevator can stabilize a harrier or other high AOA maneuvers. Some planes like to wobble side to side in a harrier. This is one potential cure.
(Generally under 30% mix)

Moving the ailerons down with up (up with down) elevator can tighten a waterfall, at the risk of causing the plane to want to snap out.

Neither of these mixes is very helpful for hanging on the prop. (hover, torque rolls, tail touches...)

Put these mixes on a switch (3 position) and experiment with plenty of altitude. Your plane's setup will affect your results. You want to be able to turn these mixes off for higher speed flight. (or to get the plane back under control if you have the mix set up wrong...)

I also prefer dual expo vs dual rates. I want full deflection available without having to flip a switch. Some radios won't do this.

I don't know which Futaba radio the Tower 6 channel is based on now. Generally Tower system 3000 is 1+ year out of date Futaba stuff that has been relabeled.
Get a TS-53 servo, peel the label. Futaba 3003 is molded in the case.

General starting point for dual rates (low rate) is 50% elevator, 50% aileron, 90% rudder. With some 3D capable planes you can safely go below 30%/30%/50% for your high speed flight mode.
