my charger will handle a max of 7 cells. I want 8 cells. will it be a problem to just have two cells in one pack and 6 cells in another while hooking them both up to the esc with a Y adaptor? Will I still have 9.6 volts?
Basically this is what I want to do so that I can charge the packs independently

Charge batteries by the charger spec or manufactures specs. Adding just one cell you'll never peak the cell correctly. Most Digital charger is microproccessed, they store memory of charge. Removing and reinstalling cell just to peak them would not be a true peak. Charging batteries that is over manufactures spec can void warranty.

The y adapter will not work because the high voltage of 6 cells will try to charge the 2 cells. It can be done by hooking them up in series (just like the 6 cell pack + to -) The voltage will then be 9.6 and you'd have to charge them sepearately as a 6 cell and then a 2 cell.
In fact your 7 cell charger will probably do the 8 cells just fine and may or may not do it at a reduced rate. Which charger do you have?

I have some cheep dynamite peak charger. it has a selector for 4 5 6 or 7 cells. I think that it was 40 dollars. So if I wired them all in series then how would charge the packs seperately

It wouldn't. Use in series and charge seperate. OR
use and charge in series. I think the charger will do just fine on 7 cell setting and an 8 cell pack.

What is the idea behind having 8 cells? If you already topped your ESC on voltage and you want more capacitance just run with two 6 cell packs in parallel or run two seven cell packs in parallel. You'll get double the amperage at the same voltage, you'd still have to charge them as two batteries though. Or even simpler just get higher capacity cells.
